Instructions:
1. Mix the chicken:
Take the large bowl and add the chicken mince, parmesan cheese, salt, pepper and mixed dried herbs together. Mix them with your hands for a fine mixture. Kneed it into a ball.
2. Egg mixture:
Break one egg in a small bowl and add 2 tablespoon of milk. Beat this mixture into a fine blend. Keep this in a flat plate.
3. Make cutlets:
Take the chicken mixture and with your hands make small round balls of the mince. Press these balls into flat patty and round them from the edges. Keep the cutlets of an even thickness. Keep these on a plate after making all of them.
4. Bread crumbs and flour
Take 2 flat plates and put the bread crumbs, spread evenly and flour in another plate. This is for the coating of the cutlets to make them crispy and crunchy.
4. The frying:
Take a shallow pan. Put olive oil in the pan and heat it. Once the oil starts getting hot, take one cutlet and dip it in the egg mixture. Now, dip it in flour so that the flour sticks evenly to the cutlet. Now, dip this same cutlet in bread crumbs to coat them evenly. Put this cutlet in hot oil for frying.
