Instructions:
1. Preheat the oven:
- Set the oven at 200 degree Celsius and preheat for some time.
2. Peel the skin of the potatoes:
- Peel the potatoes if you want, otherwise it tastes equally good without peeling. (Optional)
3. Wash the potatoes:
- Wash the potatoes properly by running it over cold water.
4. Parboil the potatoes:
- You can also parboil the potatoes in salted water for about 10 minutes if you want. (Optional)
5. Dry the potatoes:
- Dry them using paper tissues or towel.
6. Cut them into large pieces:
- Take a knife and cut the potatoes into large chunks, of about 5-6 cm each.
7. Mix all the ingredients into a container:
- Put the potatoes in a container and add oil, salt, pepper and herbs. (If you are using fresh herbs, then you need to first wash them and chop them into small pieces.)
- Mix it up properly making sure all the ingredients have been coated onto the potatoes.
8. Put them in a baking dish:
- Now take a baking dish and spread some oil on its base. Place all the ingredients from the container into the baking dish.
9. Put the dish in the oven:
- Put the baking dish into the oven and bake for 30 minutes. Toss the potatoes in the baking dish and place them in the oven again and bake them again for 20-30 minutes.
10. Serve hot:
- When itâs done, take it out from the oven and serve hot. Here you can also garnish the roasted potatoes with fresh or dried herbs or chopped coriander.
