Africa: Senegal
Caakiri of Western Africa reminds me of Kheer (rice pudding of India), with the only difference that it is made of Couscous made of wheat semolina and Caakiri refers to the grain from which it is made. The richness of this dessert comes from condensed milk, yogurt and raisins. The recipe of the dessert is as follows:
Ingredients:
Two cups of instant couscous
Butter
Salt
One cup Condensed milk
Half cup sugar
Half teaspoon Vanilla Essence
Two cups Yogurt
Nutmeg
Raisins, Sultanas and Grapes
Method:
1. Boil four and a half cups of sweetened water, and add couscous, nutmeg powder, butter and salt. Cook for ten minutes and let it cool.
2. Add condensed milk, raisins, yogurt and grapes or raisins.
3. Add more vanilla sugar into the mixture and let it cool some time, before you serve.
You can add bananas or pineapple into the dessert and garnish it with pecans. This dessert also has another version where grains and fermented milk. But this dessert perfectly sums a breakfast and snack as you can bet on it that you cannot have more than a bowl of this creamy and high-fiber content.
