An easy and no-fuss recipe for tasty and nutritious curd rice

Curd is one ingredient that is very important in the Indian cuisine. It finds use not only in preparation of rich gravies, raitas, marinades and mouth-watering dessert like shrikhand but also in simple preparations like lip-smacking lassi, dahi vada, dahi batata puri among the many. You can even decide to have a bowl of curd with your favorite parathas. I enjoy curd with rice and particularly the tempered curd rice preparation.

The curd rice preparation is easy and requires not much effort. Follow this recipe and make the delicious curd rice for yourself.

Ingredients:
Rice (boiled) – 1 1/2 cup
Curds – 2 cups
Milk – 1/2 cup
Oil – 2 tbsp
Sugar (powdered) – 2 tbsp
Green chillies (finely chopped) – 3 nos.
Chana and urad daal – 1 tsp each
Mustard seeds – 1 1/2 tsp
Fenugreek seeds – 1/2 tsp
Cumin seeds – 1 tsp
Asafetida – 1/2 tsp
Curry leaves – 10-12 nos.
Garlic cloves (crushed) – 2 small-sized
Ginger juliennes – 2 tsp
Salt to taste
Grated coconut, ginger juliennes and finely chopped fresh coriander leaves for garnishing

Method:
1.) In a pot heat oil. Add mustard seeds, cumin seeds, fenugreek seeds, asafetida, chana and urad daal and fry for a minute.
2.) Now add in the ginger, garlic, curry leaves and green chillies. Saute them for a minute.
3.) Mix in the rice. Stir well. Now pull off the stove.
4.) Add the curd, milk, sugar, salt and mix well.
5.) Serve garnished with chopped coriander leaves, ginger juliennes and grated coconut.
