Banquets at business conventions are reportedly weighing heavy on the budgets of event planners, as they are making attempts to cater to the sophisticated palates of the diners.

Facts claim that heavy budgets on a full-fledged buffet or regular meals is forcing the planners to expel a course or two and leading them to bank only on appetizers or desserts costing $36 to $41 for two or three entrees a person.

In contrast to the lighter fare including soups, salads, fruits and sandwiches, some conferences have claimed to introduce live cooking stations to amuse their guests with regional, seasonal and ethnic delicacies.

Though there might be infinite excuses of budget and holding an active pre-dinner crowd, yet there are ideas generated by experienced catering units that not only do online menu-planning but also cater to the budget of the event.

Event planners should learn from the latter example of serving seasonal and ethnic delicacies, which can be made from local vegetables, comparatively cheaper than the chic-looking packed stuffs at the supermarkets and in any case meal tickets is always an option to serve upscale dishes at the business conventions.
