Bibingka: The Filipino Version of Rice Pudding

bibingkaBibingka is the traditional dessert of Philippines and records say that it is the Indian version of Bebinca, made of eggs and coconut milk. In the traditional bibingka there is the use of ‘galopong’ or ground rice paste. This dessert tastes much like rice pudding and is made by mixing sweet rice flour, sugar, baking powder, eggs and milk. This mixture is stirred and then poured into a greased baking tray and bake it in a clay pot for 35-45 minutes. This cake is topped with desiccated coconut and sugar before serving.

Bibingka is eaten hot topped with salted duck eggs. The flavors in bibingka balance well with slightly sweet flavor and salt from duck eggs. This is much like a standard cakes except for the use of rice flour and the toppings.
