Bitter Vegetable Casserole aka Shukto

Vegetable casseroles are quite famous at this time of summer in East India and the most famous casserole is Shukto, which is bitter
vegetable casserole but without the bitter taste.
This recipe is made in the following manner:

Ingredients

Chopped Bitter Gourd
Chopped Ridge Gourd
Sliced Drumsticks
Chopped Green Bananas
Chopped Radish
Small Pulse Cakes
Small Egg plant
Small Potatoes
Mustard Paste
Nigella Seeds
Mustard Seeds
Fenugreek Seeds
Cumin Seeds
Fennel Seeds
Green chilies
Salt
Sugar
Milk
Clarified Butter

Method

1. Fry pulse cakes, potatoes and brinjal and bitter gourd separately in oil.

2. In the same wok add green bananas, radish, drumsticks and cover them with water.

3. Once they are tender add the rest of the vegetables, except bittergourd, salt, mustard paste and green chillies.

4. Afer cooking the vegetables for sometime add bittergourd and then add milk and sugar mixture.

5. Finally temper it with all the five seeds spluttered in hot clarified butter. Garnish it with the fried pulse cakes.

6. Serve hot with rice
