Carrot and Beet Stew

Carrots and beets are a wonderful combo, when cooked properly. I love them stewed simple with no other flavors than theirs, as what is important to me is the restoration of the natural flavor and nutrition of carrots and beets. The recipe is as follows:

Ingredients

Cubed Carrots
Cubed Beets
Sliced Onions
Crushed Garlic
Green chilies
Crushed Ginger
Bay Leaves
Tomato Puree
Salt
Black Pepper
Oregon
Cilantro
Chicken Stock

Method

1. Fry onions, garlic, green chilies, bay leaves and ginger until golden brown.

2. Add the rest of the ingredients( veggies, herbs and seasonings).

3. Add chicken stock and slow-cook until carrots and beets are tender.

4. Serve with mashed potatoes and grilled chicken.
