Chicken with cashew for chilled and frosty nights. You can enjoy chicken cashew recipe this weekend. Chicken broth and soups are relished by most of mine (non vegetarian friends). I love bone marrow, neck and the leg piece (containing maximum bone marrow and flesh).

Substitute for proteins and acts as power house for amino acids (building blocks of proteins). Helps you to recover from cold and fever. Recipes of chicken are full of nutrition which helps you fight against diseases.

Plus point of this recipe is that you need not remove skin saving time but simultaneously you need to clean chicken very carefully else you may catch diseases.

Ingredients

3 chicken breasts (boned and skinned)
¼ c soy sauce
1/2 pounds (approximately 250gms)
2 tbsp of cornstarch (it will thicken the gravy)
1/2 pound (approximately 250gms) o chopped mushrooms
1/2 teaspoon sugar
4 green unions
1/2 teaspoon salt (salt according to taste)
2 c chopped and cut into small chunks bamboo shoots drained
4 tbsp of salad oil
1 c chicken broth or bouillon cube dissolved in water
1 pack of cashew nuts (150gms)

Preparation

1. Slice breast pieces into very thin slices and cut them into inch squares. Set aside
2. Prepare vegetables; remove end and strings from pea pods, slice green part of union (use scallions) and bamboo shoots.
3. Add chopped mushrooms to the tray and set aside
4. Mix soy sauce, cornstarch, sugar and salt.
5. Heat 1 tbsp of oil in a skillet over moderate heat. Now add nuts and cook for a minute with constant shaking (stirring) pan till your nuts turn golden brown. Remove them and reserve.
6. Pour remaining oil in pan, fry chicken quickly and stir it constantly till it looks opaque. Cook it at medium (simmer) flame.
7. Add pea pods, mushrooms and broth.
8. Cover and cook for about 2 minutes.
9. Remove it and add soy sauce mixture, bamboo shoots and cook until thickened, stir constantly.
10. Simmer flame and add green unions and nuts. Serve immediately to your loved ones on the dinning table and accomplish them with this delicious enjoyable chicken recipe.
