How to Cook Smoked Salmon

1. Salmon fillet

2. Salt

3. Ginger root (Grated)

4. Granulated sugar

5. Brown sugar

6. Soy sauce

9. For garnish – Salmon roe, sake (Japanese wine), lemon Juice, radish sprout and finely grated ginger root

Instructions:

1. Marinate salmon with salt and sugar

Wash salmon fillet and marinate it with grated ginger, granulated sugar and salt. Warp the plate of the marinated salmon and place it in the refrigerator for almost 12- 24 hours. This will help salmon fillet to hold the flavour and taste of ginger, salt and sugar.

2. Prepare salmon to place in the foil

Get your marinated salmon fillet out of the refrigerator and very softly rub off the extra salt and sugar from the fillet. Also, make sure to discard the juice that accumulated in the marinating plate.

3. Prepare sauce for salmon

Now, in a separate bowl mix five spice powder, brown sugar and soy sauce. Put this mixture on the top of the salmon fillet and spread it evenly. Now, place salmon fillet on a silver foil and cover it. Poke small holes in the foil and place salmon fillet on the wire racks that can easily fit with the wok.

4. Smoke your salmon

This part is important as it will help to smoke the salmon fillet. Line the wok with the help of a foil. Now place white rice, tea leaves and around 15 mil of water in the foil. Cover and continue heating until you see it smoking. Now, add salmon to it and cover. You will have to hold the smoke in the wok so prevent escaping smoke by covering the edge of the wok by wet dish towel.

5. Cook and check your salmon

Smoke the fish for almost 15-17 minutes. Test it with the fork and if you see the fillet has become flaky, understand that salmon fillet is ready to be garnished. You will have a tea smoke here as you have added tea leaves to it.

6. Garnish salmon with roe mixture

For garnishing, in a small bowl mix salmon roe with sake. Stand for sometime and then drain. Garnish the salmon with finely grated ginger and lemon juice. Cut or break salmon according to your choice and then top it with salmon roe mixture and radish sprout.
