Creamy Coconut Raita: Simply delectable

If you simply add a bowl of raita to your daily meals, it’s not only delicious but also healthy. Apart from a range of usual boondi, potato and mixed raitas that usually are present in almost all menu lists, there is something else you can try your hands on. Creamy Coconut Raita!

Ingredients:
1 1/2 cups freshly grated coconut
21/2 cups beaten fresh curd
4 tbs arhar daal
4 tbs mustard oil
7-8 curry leaves
Salt to taste

Method:
Mix coconut and curd in a large bowl thoroughly
Add salt and mix further
Heat oil in a pan
Add arhar daal and curry leaves and mix for two minutes
Put the coconut-curd mixture in the pan and blend well
Serve hot or cold
