Delicious breadcrumb and egg coated chicken cutlets

Ingredients:
Boneless chicken (boiled and finely shredded) – 1/2 cup
Potatoes (boiled, peeled and mashed) – 1/2 cup
Onion (finely chopped) – 1 medium-sized
Carrot (grated) – 2 tbsp
Green cabbage (grated)- 2 tbsp
Green chillies (finely chopped) – 3 nos.
Ginger-garlic paste – 1/2 tbsp
Tomato ketchup – 1 tbsp
Black pepper powder – 1/2 tsp
Soy sauce – 1 tbsp
Vinegar – 1 tbsp
Oil – 1 tbsp
Salt to taste
Eggs – 2 nos.
Breadcrumbs for coating
Oil for deep-frying.

Method:
1.) In a frying pan, heat 1 tablespoon oil. To this add green chillies, onions and fry till onions turn pink.
2.) Now add ginger-garlic paste and fry for a minute. To this add the pepper powder and salt. Saute for a minute.
3.) Add ketchup, soy sauce and vinegar. Now add the chicken, cabbage and carrot. Mix well.
4.) Mix in the potatoes and stir well. Pull off the stove.
5.) Let the mixture cool. After the mixture has cooled, make discs of medium thickness out of the mixture.
6.) Beat the eggs. Dip the discs in the eggs and roll the discs in breadcrumbs.
7.) Deep-fry these until they are golden- brown in color.
8.) Serve hot with tomato ketchup.
