Easy and appetizing ways of including peas in the daily diet

Peas are one of the popularly consumed legumes around the world. They consist of many nutritionally important compounds. Packed with scores of vitamins and minerals, proteins and dietary fiber, it can be said that it is important to include these tiny, rounded or flat, green legumes in our daily diet. The different varieties in which peas are available are garden/green peas, snow peas and snap peas. peas 4717

Although, peas are good for our health many people do not really like to eat them. Therefore, to make such people eat peas you can try out the following simple but yummy recipes.

I] Baby peas, ricotta and spring onion salad
Ingredients:
Baby peas (fresh) – 500gms
Olive oil – 3 tbsp
Spring onions (sliced) – 10-12 nos.
Lemon juice – 1 tbsp
Black pepper powder – 1/2 tsp
Salt to taste
Ricotta (or any fresh curdy cheese) – 200 gms
Method:
1.) In a pot, boil water and to it add the peas for about 2 minutes. Drain and keep the peas aside.
2.) In a pan, heat a tablespoon of olive oil and saute the spring onions till they are soft.
3.) In a mixing bowl, mix the remaining olive oil, lemon juice, salt and pepper. To this add the peas and sauteed onions.
4.) Serve the salad garnished with crumbled ricotta.

II] Creamy Potatoes and Peas
Ingredients:
Small potatoes (boiled, peeled and cubed) – 2 cups
Green peas (boiled) – 1 cup
Whipping cream – 2/3 cup
Black pepper powder and salt to taste

Method:
In a large mixing bowl, mix the potatoes, peas, salt, pepper and cream. Mix well. Go ahead and enjoy.
