Eton Mess: The legacy of the messiest dessert

eton messEighteen Prime Ministers in Britain might not have missed it, the amateur meringue makers might have found delight in making it and the wildest dessert inventions might have heralded it, as it was whipped in I don’t know what passion, on Eton College’s annual celebration at Eton college, Britain. Till date the most famous dessert of Britain, Eton Mess, is served in the Eton College and in other parts in Britain. Eton Mess is a “mish-mash” of softly whipped cream with fresh strawberries and meringue cookies. To know more why I used the phrase “whipped-up in a sort of frenzy” read the following recipe to get a clear idea:

Method:

1. Whip up 3 large egg whites, until they form peaks. Follow it up with 1/4 teaspoon cream of tartar and whip until foamy. Alternate whipping with the addition of 150 gms superfine castor sugar (it should be one teaspoon at a time).
2. Simply put spoonfuls of this batter in a lined baking tray and bake it in a pre-heated oven of 250 degree centigrade.
3. Bake it evenly by adjusting the baking sheet to ensure uniform baking, bake it until the meringues are ivory in color. After the meringues cool down, test one of them by breaking it. After they are broken, they will be crisp and cool.
4. The most exciting part is here:

Break the meringues, chop the strawberries, and
whip the cream;
Puree the strawberries, add some sugar and whip them in;
Whip some cream, add some puree to swirl ‘n’ sing;
Scoop some cream, fold some broken
meringues;
Top the mess with some cream, mess it again,
with some puree-red berry to blend-in .
