How to Make Fruit Ice Cream

  1. Your choice of fruit
  2. 1 cup whipping cream
  3. 2 cups milk
  4. 1/4 cup powdered milk
  5. 8 egg yolks
  6. 1 cup sugar
  7. A blender
  8. Wooden spoon
  9. Ice cream maker

Instructions:

1. Making milk mixture

Heat sugar, milk powder and liquid milk on low flame in a pot. Warm it till the sugar dissolves properly.

2. Whisking egg yolk

Separate the egg yolks and whisk them in a bowl till the mixture is thick. It is suggested to use a low speed hand mixer. This process will require about 2 minutes. While whisking the egg yolk, slowly add the hot milk from the pot.

3. Heating and temperature check

Transfer the mixture back to the pot and heat it on a medium flame. You should constantly stir the mixture with a wooden spoon. You will observe that the mixture starts to thicken. Check the temperature with a thermometer. It should show a reading between 150 degree F to 170 degree F.

4. Freezing

The next step is to add the mix in the whip cream and put the mixture obtained into the freezer bowl. The mixture should be kept in the deepest part of the freezer for at least 6 to 8 hours.

5. Blending the fruit

Put 1 cup fruit pulp into the blender and crush it til it gets coarsely ground. You can either select one particular fruit or mixture of two or three fruits. However, tropical fruits, strawberries and raspberries are best for making ice cream. Add the fruit mixture to the milk and cream mixture before one hour of serving the ice cream. Mix it well and put it into the freezer bowl.

6. Processing in the ice cream maker

Now, put the bowl in the ice cream maker and let it work for about 25 to 30 minutes. The mixture will thicken after this period of time and you can see it’s done through the top opening of the cream maker. If you like to have firm ice cream, put this mixture into an air tight container and place it inside the freezer for about two hours.
