Complexity Level: Basic
Time Required: 30 to 35 minutes
Resources Required:
- 2/3 cup butter
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 4 teaspoon of milk
- 1/2 teaspoon cream of tartar
- 2 cups flour
- 2, 8 ounce pack cream cheese
- 2 1/2 cups sugar
- Sliced fruits
- Pizza pan
- Mixing bowls
- 3 tablespoon cornstarch
- 3 teaspoon sugar
- 4 ounces of pineapple juice
Instructions:
1. Preparation
- Take the necessary ingredients out of the refrigerator and bring them to room temperature.
- If you are not using a non-stick pizza pan, then grease the regular pan with a non stick cooking oil or butter.
- If using canned fruits, open the cans and empty contents into small bowls.
- Pre-heat the oven to 350F.
2. Make the base
- Into a medium size bowl, add sugar and butter. Beat them well till they become light and creamy.
- Add the egg followed by the vanilla and milk and beat until they get fluffy.
- Finally, add the flour and cream of tartar and mix until they get blended well. Don’t overdo it.
- Place the mix in the pizza pan and spread it out evenly into the bottom. Press well making sure there are no holes visible.
- Place in the middle shelf of the oven and bake until the crust turns a golden brown color, approximately 15 minutes.
- Remove from the oven and leave aside to cool completely.
3. Assembling
- Into another large bowl, add the softened cream cheese and mix it well with 2 1/2 cups of sugar until creamy and smooth.
- Spread this mix over the cooled crust as evenly as possible, using a spatula.
- Layer the fruit, starting from the outside and working your way through to the middle.
- You could start with the pineapple slices and then move on to strawberries, bananas etc.
- Once you are done, there shouldn’t be any visible cream cheese layer and you can even double layer the crust with more fruits if possible.
4. Sweet glaze
- Place a small saucepan over medium heat and add the pineapple juice, sugar and corn starch into it.
- Cook, stirring constantly till the mixture begins to thicken.
- Take it off the flame and allow to cool completely. The mixture would continue to thicken at this point which is fine.
- Place the fruit pizza on a serving tray and lightly spoon the glaze over the fruits carefully and as evenly as possible. Make sure all the fruits are covered in the syrup.
- Cover and refrigerate for at least two hours before you serve.
Frequently Asked Questions:
Are fruit pizzas healthier than normal pizzas?
If you eat any food in moderation, it wouldn’t do much harm to your health. However, a fruit pizza is considered a bit more healthier than meat pizzas as you are using fresh fruits rich in vitamins. Use low fat cream cheese and replace the sugar with splenda and you have a healthier version.
Quick Tips:
1. If you are using bananas in fruit pizza, dip bananas in some lemon juice to prevent browning.
2. You can also use a ready made cookie dough or crescent roll dough as base which will save time.
3. Use any flavoring of choice like vanilla, almond, orange etc to the cream cheese to enhance the flavour.
Things To Watch Out For:
- If you don’t drain the canned fruits properly, the pizza base could end up getting soggy, harnessing the taste and texture. So, dry the juicier fruits on a paper towel so that it absorbs most of the water.
- Don’t serve the pizza without refrigerating it.
