Most of China cuisines use marinade in it probably to add more flavor to the recipe ingredients. Boneless chicken is relished and enjoyed in parties and can be used as snacks along your cocktails. I assure you you’ll love it.

Ingredients

2 boneless chicken breasts (about 400gms)
3 cloves garlic and an equivalent amount of ginger
5 scallions (you can use the stem or the white part)
2 teaspoon peanut oil
Bright red chilies according to your taste (I mean s many as you can tolerate)
1 teaspoon whole Sichuan peppercorns
Around one fist of roasted peanuts (unsalted)

How to prepare a marinade

1/2 teaspoon of salt
2 teaspoon of light soy sauce
1 teaspoon of Shaoxing rice wine (or med. dry sherry)
1.5 teaspoon of potato flour (or 2.25 teaspoon of cornstarch)
1 Teaspoon water

Sauce 3 teaspoons of sugar

3/4 teaspoon of potato flour (or 1 1/8 tsp cornstarch)
1 teaspoon dark soy sauce
1 teaspoon light soy sauce
3 teaspoon Chinkiang vinegar (or Chinese black vinegar)
1 teaspoon sesame oil
1 teaspoon chicken stock or water

Preparation

1. Mix marinade in a bowl and add small cubes of chicken to it mix the pieces with marinade ingredients.
2. Peel the scallions, garlic and ginger and chop them into small chunks.
3. If using red chilies discard the seeds and use the chopped skin (be careful while snipping chilies they may harm your eyes and skin).
4. In a small bowl combine sauce ingredients
5. Season the bowl and heat it over the oven and add 2 teaspoons of oil and heat the oil add chilies and Sichuan peppercorns and stir fry till they are crisp and begins to generate in it .( do not heat too much that your spices are smoky.
6. Add chicken and stir fry it over heat flames.
7. As soon chicken cubes separate add ginger, garlic and scallions and continue to stir until chicken is cooked.
8. Finally add sauce and continue to stir and toss.
9. As soon sauce thickens and becomes velvety and shiny add cashew nuts and some peanuts and continue to stir till they are golden brown and serve as dinner to your family members and guests. Rice (staple food) goes best with this recipe. You could use raw cashew nut/peanuts when running short of time.
