Ingredients
Fresh Red Snapper
Crushed Garlic
Yogurt
Green Chilies
Coriander Leaves
Salt

Method
1. Clean the snapper from its gills, scales and intestines.
2. Make a paste of green chiles and coriander leaves.
3. Whip the above paste with yogurt, salt and crushed garlic.
4. Gash the fish horizontally and the smear the paste evenly on the snapper.
5. Wrap it tight in a plastic bag and keep it overnight in the refrigerator.
6. Before pan-searing it, brush the marinated fish with oil.
7. Clean the skewers and ask some one to fan the charcoal fire to ensure that the grill is hot.
8. Spray some more oil and place it on the charcoal grill.
9. Do not flip until the first side is done.
10. Flip it over to the other side and cook until the flesh is flaky.
11. Garnish it with lemon juice and onions rings.
