Happy Holi: Poha Dumplings on Caramel Pudding

I wish all my Indian friends in India and abroad A Very Happy Holi and here I am sharing with you some lovely foods that you can try out tomorrow right out of my food basket.

The first one gotta be something sweet and I am going to tell you how to make something exceptional out of the good-old chiwda or Poha.

Ingredients

Soaked and drained Chiwda/ dried rice flakes
Milkmaid
Toned Milk
Eggs
Sugar
Rose essence
Cashew, cherry and raisin paste
Soda
Bananas

Method

1. Mash up poha, soda and bananas. Make balls out of them and roll it on your palms. Stuff it with the dry-fruits paste.
2. Steam the stuffed balls.
3. Make pudding base by mixing a tin of milkmaid, milk, rose essence and eggs. Caramelize sugar in a mold add the batter and steam.
4. In a pudding bowl spread a layer of powdered cookies or shortbread, pudding and top it with the Poha dumplings. You can top this rich dessert with chocolate sauce and whipped cream.
