How to cook smoked fish

1. Two smoked Fish

2. one-tablespoon oil

3. One big onion- washed and chopped

4. Three ripe tomatoes- washed and chopped

5. Two cups coconut or fresh milk

6. Juice from half lemon

7. One teaspoon curry powder

8. One bunch Coriander – chopped

9. Salt to taste

Instructions:

1. Do the initials: Choose your fish and wash it thoroughly. You can wash it in running water or simply soak for sometime in water and clean it. While choosing the fish take the one that has scales on it. This will avoid it from breaking and will keep it together when it’s getting cooked.

2. Arrange the tomatoes: Cut the tomatoes into thin slices. Cherry tomatoes are the best for smoked fish but you can use other ones too. Also cut the onion into small, thin slices. If you do not want to use the regular onion, you can use spring onion that will equally add to the taste and flavor of the dish.

3. Cook the fish: Pour water into a pan and let it boil. then slip the fish in, Alternatively, you can put a little oil into the pan and fry the fish till its golden brown in color. Do it the way you would prefer. Boiling will make the fish soft and frying will make it on more on the crispy side. Add the salt in this step.

4. Other ingredients: In a pan, add oil and to this add the chopped onions and the tomatoes. Stir till the tomato-onion mixture is soft and quite done. Now pour in the coconut milk and boil it well. Coconut milk has its own aroma. Cooking it well with the meat used gives its aroma a new twist. Sprinkle in the curry powder now.

5. Add the fish into spiced gravy: Now boil the ingredients of the pan for a few minutes and then slide in the fried/boiled fish. Simmer this and cook this for about 15 to 20 minutes, letting the fish not to break. Then add lemon juice and chopped coriander. This enhances the flavor and for the aroma to sink in, simmer for a couple of minutes and serve hot.
