Many of us may not know about the origin of the lamb meat hung vertically on a rotisserie or the doner kebabs. Well, the dish originated in Turkey and Haci Iskender from the Bursa city in Turkey is regarded as the inventor of the doner kebabs or kebaps. Here is an easy way to prepare a mouth-watering doner kebab dish.
Ingredients for the recipe
It’s obvious to mention lamb as the first ingredient, you need about 8 ounces of lean lamb and the same quantity of minced lamb.
- Sliced Cucumber about 3 to 4 ounces
- 16 leaves of shredded Lettuce
- 2-3 cloves of crushed garlic
- Two large sized sliced tomatoes
- 4 tablespoons diet yogurt
- Wholemeal Pitta bread large, 4
- 1 teaspoon of white flour
- 1 teaspoon grounded coriander leaves
- ½ chopped medium sized onion
- 1 olive oil spray
- 1 teaspoon finely grounded cumin
- Grounded black pepper 1-2 pinches
- 1 teaspoon salt or as per taste
Sauce preparation
Garlic sauce would be a great companion with the lamb doner kebabs. We will prepare garlic cream sauce to relish with the dish. The ingredients you need for the sauce are:
- 2 tablespoons minced garlic cloves
- 2 cups of whipping cream
- 1 teaspoon of chicken or vegetable broth
- ½ cup of parmesan cheese, shredded
- Olive oil 1 tablespoon
- Butter 1 tablespoon
- Flour 2 tablespoons
- Salt as per taste
- Pepper as per taste
Pour the olive oil and butter in pan over a medium flame, after the butter has melted add the minced garlic to it. Mix flour in the pan and stir continuously until the mixture turns light dark. Heat the whipping cream and the broth separately and mix it into the roux we prepared in the pan.
Take care that you do not boil the cream and the broth and after pouring it in the pan, stir the mixture continuously. Add salt and pepper in the pan and keep stirring on medium heat. When the sauce starts to thicken, add the parmesan cheese until it melts. Remove the mixture from heat, the sauce is ready.
Preparing the kebabs
Put the minced and lean lamb, salt, pepper, cumin, coriander and onion in a food processor. After mincing make 4 meat balls of the mixture. On a sheet of cling film pour ¼ teaspoon of flour, place a lamb portion on half of the cling film, and cover it with the other half. With the help of a rolling pin, flatten the lamb portion. Repeat the process with other three lamb balls.
Add oil to a large frying pan and heat the oil over medium heat. Remove two flattened lamb portions from the cling film and place it in hot oil to fry. Fry these on both sides for at least 1 minute each. Repeat this with the other lamb portions.
Heat the pitta breads by placing them in the oven for about a minute or two. Place these breads on a plate, cut them open from one side, fill in the lamb and the salad. Pour the delicious garlic sauce over it and serve.
