How to Make Hummus

Hummus is a popular food item in the Middle Eastern countries and can be used in a variety of ways. You can fill a sandwich with it, use it as a dip with various breads, or chips, crackers and even eat it as raw vegetable. The word hummus in Arabic means chickpeas which form the main part of this tasty dish.   1. I cup dried chickpeas
  2. 3 cloves of raw garlic
  3. 1/3 cup sesame tahini

Instructions:

1. Preparations

  • Mash the garlic pods and then mince it lightly.
  • Squeeze the lemon juice from the lemon. You should get at least three tablespoons of juice.
  • Measure 1/3rd cup tahini paste and keep it ready.

2. Cook the chickpeas

  • Soak the dried chickpeas in some cold water over night or for at least 6 hours.
  • Drain and rinse well under running water and then place it in a colander to completely dry.
  • Place a saucepan on medium heat and add 1 quart water.
  • Bring to a continuous boil and add the drained chickpeas.
  • Reduce heat, cover and cook until tender. It should take approximately 1 1/2 to 2 hours.
  • Once done, drain off the liquid, but reserve some for later use.

3. Make the hummus

  • Into a food processor add the minced garlic, cooked chickpeas, tahini, lemon juice, cumin, pepper and olive oil and pulse a couple of times to get a thick and fluffy paste.
  • Scrape down the sides and check if all the chickpeas have been pureed and mixed well with the garlic.

  • Add the reserved water to the mixture, one tablespoon at a time and continue blending to achieve the required consistency.

4. Serving

  • Spoon the mixture into a serving dish and smooth it out in big circles using the bottom of a spoon.
  • Create a sort of well in the center and add a couple of teaspoons of olive oil.
  • Garnish with some chopped parsley or more garlic.
