Kanyah: Dry De(s)sert with nuts and rice

peanut cookiesKanyah is an interesting dessert made in Africa and it is a dry dessert made only with parched rice or rice flour, peanuts and sugar. This dessert is made by browning shelled peanuts, rice flour or uncooked rice, grinding them finely into a powder and mixing sugar with it.

This simple dessert is simply nutritious and can be used in moist dessert, ice creams and custards. Kanyah can also be stored in air-tight containers or pressed together to make cookies…I am thinking to pipe-in some cream.
