Fenugreek leaves is a medicinal green, often neglected in meal preparation. This green goes great as a pair with potatoes, cauliflower and meats. The following recipe pairs fenugreek leaves with lamb meat.
Ingredients
Boneless Lamb Meat
2 Cups Fenugreek Leaves
Cubed Potatoes
Garlic Paste
Chopped Tomatoes
Sliced Onions
Turmeric Powder
Red Cayenne Pepper
Coriander Powder
Salt
Method
1. Fry potatoes and fenugreek leaves in oil. Cover and cook them on slow fire until the potatoes are tender and the leaves are done.
2. In a pressure cooker, fry onions until brown and add turmeric powder, garlic paste and tomatoes.
3. After stirring the mixture in step 2, add red cayenne pepper, coriander powder, lamb meat and salt.
4. Stir well and cook covered on slow fire until the moisture from lamb meat dries out.
5. Add water to the lamb meat and pressure cook until the meat is tender.
6. Add fried fenugreek leaves and potatoes to the lamb meat and simmer for 15 minutes.
7. Serve with boiled white rice.
