Generally cooking style differs from person to person though your food ingredients may be same but flavor and taste differs. Chicken salad topped with Mimi’s honey and mustard dressing along with some crispy crunchy cashews giving your salad an elegant look.
Mimi’s Famous Dressing :

1 cup buttermilk
2/3 cup mayonnaise
2 heaping tbsp of honey Dijon with mustard seeds
4 tsp. grated onion
1 tsp. celery seed
Store processed dressing in your refrigerator with a tight lid and use when needed.

Ingredients
Diced celery in 1/4 inch pieces (125gms).
Two chicken breasts cooked in chicken stock (which is why they turn yellow) and then cool and dice in 1/2 inch pieces. This should be about 2 cups (225gms) diced chicken.

Add 1/2 cup (75gms) sliced green onions (scallions), with both green and white parts. Mix this up with 1/2 cup of Mimi’s famous dressing (with celery seed). Taste to see if you want a tiny bit more mustard.

Sprinkle on top 1/3 cup (30-50gms) chopped cashews
2 chicken breasts, cooked in stock and then cooled and diced in 1/2 inch pieces (2 cups chicken)
1 cup diced celery, cut in 1/4 inch pieces
1/2 cup sliced green onion, white and green parts
1/2 cup Mimi’s famous dressing
1/2 tsp. additional honey Dijon mustard, if desired
1/3 cup or more coarsely chopped cashews

Method:

Clean visible fat and membranes from chicken breasts; simmer in chicken stock until done, about 15 minutes.
1. Let chicken cool and dice in 1/2 inch pieces. While chicken cooks; prepare chopped celery, green onions and cashews.
2. Combine chicken, celery, green onion, and 1/2 cup Mimi’s famous dressing and stir until chicken is coated with dressing.
3. Taste to see if you want to add the 1/2 tsp. additional mustard. Mix in cashews, sprinkle few on top, and serve.
4. Do not refrigerate it else your buttermilk will taste milky.

Preparation

Toss all ingredients in a bowl and top with Mimi’s mustard dressing sprinkled with chopped cashews or use roasted cashews to enjoy the crunch and taste in your salad.
