My Kitchen: Hometown Culinary Experiences #11 – Stir-fried Spinach in East Indian style

spinachSpinach can be made in numerous ways and is made in numerous ways in various parts of the world. Cottage cheese in Spinach Sauce in the North, Spinach soup in the Italian Cuisine, Spinach and beef casserole and other spinach recipes.

In Orissa spinach is cooked in the simplest way possible. This green-leafy vegetable is simply stir-fried. This stir-fry is done by chopping spinach and washing it properly under running water in a colander.

Method:
1. Crush 8-10 cloves of garlic.
2. Chop onions and eggplants.
3. Saute onions and garlic in oil until brown.
4. Fry brinjals until brown and to it add slitted green chilies.
5. Add spinach to it and cover it with a lid.
6. Keep stirring spinach and cook until all its water gets dried and the leaves are tender, but not soggy.
7. Season it with salt.
8. Garnish the spinach with crispy fried pumpkin cakes

Stir-fried spinach, meat stew and boiled rice make a wonderful lunch in winters.
