avioalHealth foods are an integral part of East Indian Cuisine and while cooking them the easterners do not compromise with the ingredients. I am going to tell you about a simple vegetable stir-fry, which accompanies brown bread, white bread, chapatti (roti) and rice in East India.

This vegetable casserole is braised and is called as “Santula”.It is prepared by braising all the seasonal vegetables.

Ingredients:

    Cauliflower
    Baby potatoes
    Carrots
    Peas
    Tomatoes
    Radish
    Turnips
    Green Beans
    Cumin Powder
    Turmeric Powder
    Crushed Garlic
    Onions
    Oil

Method:

1.Fry onions, garlic in a tablespoon of oil and add turmeric powder. Fry until brown and keep aside.
2.Steam all the chopped vegetables in a vegetable steamer
3.After the vegetables are just tender, transfer them to a wok and add the fried onion and garlic into it.
4.Add salt and cook the vegetables for 5 minutes
5.Season the vegetables with freshly ground cumin powder.

Serve Santula with rice or bread and the best accompaniment to this casserole is sauteed spinach and grilled fish.
