NZ to host Fish & Game Bird Food Festival

New Zealand has experienced a dozen of food and wine festivals in the past years, but this year the country is organizing Fish & Game NZ Wild Game Bird Food Festival for the first time. This festival will be held in the top 16 restaurants of the country and will run from May 8th to 28th, 2006. As per Shonagh Lindsay, Fish & Game NZ Public Awareness Advisor:

It’s a fantastic opportunity for New Zealanders to taste and appreciate the wonderful flavors of wild game birds, prepared in a variety of exclusive dishes by the country’s top chefs.

This golden opportunity for the chefs to present the best of game dishes and set them against the best of wines for the consumers to know the variety of tasty dishes that can be prepared from game birds. The game birds that will be hunted this year include Canada goose, Grey Duck, Mallard Duck, Paradise Shelduck, Californian Quail, Cock Pheasant, Black swan, Chukar and Pukeko. The dishes that will be prepared from the birds include duck prosciutto, whole foie gras, pheasant confit and semiboneless quail.

In a nutshell this wild game festival will not only encourage the chefs but also the hunters, who would bring a hunted game just before 24 hours to be prepared into a meal. This expansion and exploration of culinary possibility and promoting it through a food festival is innovative and equally challenging.
