Many people consider salads to be bland food preparations meant to be consumed only if one has to cut down calories in ones diet. Apples (deseeded and diced) – 2 cups
Celery (sliced thinly) – 1 cup
Grapes (seedless and halved) – 2/3 cup
Chicken breast (grilled and shredded) – 2 cups
Pecans (toasted and chopped) – 1/4 cup
Mayonnaise and sour cream – 1/2 cup each
Lemon juice – 1 tbsp
Dijon-style mustard – 2 tsp
Sugar – 1/3 cup
Salt and pepper to taste
Green/red lettuce leaves – 5-6 nos.
Walnuts (chopped) – 1/4 cup
1.) In a large mixing bowl, mix together apples, celery, grapes, chicken, and pecans.
2.) In a second bowl mix mayonnaise, sour cream, lemon juice, mustard and sugar thoroughly.
3.) Add the contents of the second bowl to the large mixing bowl and mix well.
4.) Now add salt and pepper and mix again.
5.) Place leaves of the lettuce an place in the serving plate.
6.) Place all the salad onto the lettuce leaves, garnish with walnuts and serve.
