Peanut Butter & Oatmeal Chocolate Cookies

Ingredients:

1/2 cup Peanut butter
1/2 cup Oatmeal
3/4 cup & 1 tbsp Caster sugar
3/4 cup & 1 tbsp Refined flour (maida)
1/4 tsp Baking soda
1/2 tsp Cinnamon powder
1/4 cup & 1 tbsp Desiccated coconut
2 tbsps Roasted peanuts (crushed)
1 tsp Lemon rind (grated)
1 tbsp Golden syrup / honey
2 tbsps Milk (chilled)

Method:

Set the temperature of oven at 180°C
Oil a baking tray
Put peanut butter in a large bowl and soften it with a timber spoon
Add sugar and mix well with the peanut butter
Filter flour with baking soda and cinnamon powder into the bowl
Add oatmeal, desiccated coconut, crushed roasted peanuts, lemon rind, golden syrup and mix them well
Pour cold milk and mix into a dough. Don’t knead it too much
Take cube sized portions, roll them into balls and press lightly
Place these on the oily baking tray keeping satisfactory space between each
Bake in the oven for about fifteen minutes
Turn them onto a wire rack to cool
Store in hermetically sealed container
