Pfannkuchen: Pancakes fuse-in bread&jam bonanza

These pancakes are shaped like bowls and they are usually eaten with lemon, sugar or jam. These pancakes are called as Pfannkuchen in some places and they are locally called as Berliner. But in South Germany and Austria they refer to it as Krapfen or crullers. These pancakes are usually eaten in the New Year’s Eve and Carnival holidays and in English speaking countries they are referred to as doughnuts that are filled with jam. The Berliners are made from sweet yeast dough and are filled with jam or marmalade and is topped with sugar. The recipe of Berliner is as follows:

Ingredients

1 oz fresh yeast
1 cup warm milk
2.5 oz sugar
14.1 oz flour
2 eggs at room temperature
4 1/2 tablespoons unsalted butter
grated zest of 1/2 lemon
Salt
Strawberry jam
Oil
Granulated Sugar

Method

1. Dissolve yeast in sugar and a bit of warm milk.
2. Sift the flour and add the yeast mixture in the middle and let the flour mixture rise.
3. Combine eggs, butter, lemon zest, salt, sugar and the right amount of milk required to knead the dough.
4. You can roll out dough into the shape of bread and place a spoonful of strawberry jam.
5. Cover it with another rolled out dough of the same diameter
6. Deep fry the Berliner and then dust it with sugar.

This in fact is a stuffed pancake and much like a bread puff. It reminds me of soft-cake sandwiched with jam. This dessert is simply mouth-filling and it all depends upon the filling you give and serve it with the traditional accompaniments of chocolate, mocha, champagne and advocaat.
