Pulao: The king of festive foods

mpcIn East India Pulao or fried rice tops the list in any festival. The main ingredients of pulao are:

Ingredients

Cooked Basmati Rice
Peas
Sliced Onions
Slitted Green Chilies
Bay Leaves
Cashew Nuts
Raisins
Clarified Butter
Cinnamon Powder
Whole Cardamom
Whole Cloves
Salt

Method

1. In a wok take oil add cardamom, bay leaves, whole peppercorns, nuts, raisins and onions. Fry onions and green chilies and peas until golden brown.

2. Add rice and stir continuously so that the flavor of onions mingle with rice. Turn off the heat and season it with salt and cinnamon powder. Place lid on the wok and seal the edges with flour paste and place the wok over heated iron pan and cover the lid with hot coals.

3. The fire on both sides of the wok will accomodate to the slow cooking of pulao and will blend all the flavors along with the rice and also enhance its flavor.

Garnish it with rose water, saffron soaked in milk, cilantro and crispy fried onions. The best accompaniment with pulao is mutton curry and a rice based dessert.
