I love eatin fish in summer for the very cause that it requires less amount of fishes and is very light during the lunch. The fish that I would recommend you is Salmon and this is the coolest way to prepare it.
Ingredients
Salmon Fillets
Yogurt
Mint Paste
Slitted Green Chilies
Dry Mango Powder
Rock Salt
Carrots
Potatoes
Broccoli
Rice
Sliced Onions
Method
1. Fry onions in oil until brown, add all the vegetables, green chilies, washed rice and salt; and cook for 15 minutes.
2. Marinade fillets in yogurt, mint paste, dry mango powder for an hour.
3. In a microwave dish alternate rice and fish fillets, add half a cup of water and microwave it for 25 minutes.
The salmon-rice casserole is ready to light up your summer dinners or cool-down a hot bowl of curry in Indian summer.
