Should apples be in the fridge and tomatoes in cupboards?

Contrary to conventional wisdom, this is what scientists are saying now. Apples are likely to stay fresher and more flavorsome when kept in the refrigerator, however, tomatoes are best kept out of the fridge.

Massey University researcher associate professor John Mawson said:

Some early varieties of apples like Royal Gala will soften in the fruit bowl comparatively rapidly. Keeping them in a plastic bag will minimize water loss and prevent them from shriveling.

On the other hand, this is what he had to say about tomatoes:

Tomatoes undergo a change in metabolism in the fridge, which leads to a loss of texture and flavour, so the best approach is to buy them close to their peak of ripeness and eat them soon, or ripen a little further in a bowl or paper bag.

Optimizing storage conditions had “huge implications” for exports. It is in this very field; of “active packaging” that professor John Mawson is doing his research. Probably he will come up with some novel results to upgrade stored food value.
