Sweet and spicy pineapple curry: Quick, easy and delicious

Pineapple is one fruit that has been extensively used in cooking. Myriad ways exist to include pineapple into recipes of curries, salads, smoothies and cakes among the many. One such lip-smacking recipe that makes use of pineapple is that of sweet and spicy pineapple curry. This mouth-watering recipe comes straight from my best pal’s kitchen and happens to be one of the many food preparations that the members of Pathare Prabhu community in Maharashtra love to indulge in.

It is indeed remarkable to relish foods from different culinary cultures of our country and what better way than to get started right away with the making of this exceptional sweet and spicy pineapple curry. The advantage of the recipe is that it is simple and can be prepared in a matter of few minutes.

Here is how the recipe goes.

Ingredients:
Pineapple (diced) – 1 1/2 cup
Onion (finely chopped) – 1 small-sized
Coconut milk – 2 cups
Gram flour/besan – 2 tbsp
Green chillies (finely chopped) – 3 nos.
Sugar – 1 cup
Salt to taste
Oil – 1 tbsp

Method:
1.) Parboil pineapple and onions together. Drain. Mix with sugar and keep aside.
2.) Now in a bowl mix the coconut milk and besan.
3.) In a pot, heat oil on medium heat and add to it green chilles. Pour in the coconut milk-besan mixture. Cook for few minutes but do not let it boil.
4.) Now add the pineapple-onion-sugar mixture and salt. Mix well and simmer on low heat until you get a thick consistency of the curry.
5.) Serve hot with steamed rice.
