The allure of the lip-smacking frittata

Have you had your daily dose of eggs today? If not then how are you planning to prepare them to suit your palate? How about trying to make an omelette the Italian-style? Yes, making frittata, the Italian omelette for breakfast, lunch or dinner is quite a savory way of having eggs. The preparation of frittata does not only include eggs but also scores of other ingredients such as onions, mushrooms, potatoes, tomatoes, olives, bell peppers, cheese, spaghetti, meat of choice among the many.

Cook up a yummy frittata by using the following recipe.

Ingredients:
Eggs – 6
Olive oil – 4 tbsp
Potatoes (boiled, peeled and sliced) – 200 gms
Mushrooms (sliced) – 50 gms
Black olives (sliced) – 50 gms
Onion (finely chopped) – 1 large
Bell peppers (sliced) – 1 of each color (red, yellow, orange and green)
Tomatoes (sliced) – 2 medium
Grated cheese (any soft cheese) – 100 gms
Garlic cloves (crushed) – 2 nos.
Nutmeg powder – 1/2 tsp
Salt and pepper to taste

Method:
1.) In a frying pan, heat half the olive oil and lightly fry the potatoes. Sprinkle them with nutmeg powder and pull off the stove.
2.) On a low flame, heat the remaining olive oil in a pan. To this add the garlic and onions and saute for 2 minutes. Now add remaining vegetables except potato and fry for few minutes. To this add the fried potatoes.
3.) Season with salt and pepper. Mix well.
4.) In a bowl, beat the eggs together. Season these with salt and pepper as well.
5.) Take a round baking dish about 9 inches in diameter. Grease the dish well.
6.) Add the stir fried veggies to the dish. Now pour the eggs over the stir fried veggies.
7.) Bake the mixture in the oven for 20 minutes at 180°C until eggs are done. After which you can sprinkle with cheese and bake for another 10 minutes or until the cheese is golden.
8.) Cut into wedges. Go ahead and enjoy the frittata before someone else grabs it.
