Topped pizza with eggplant

Easiest and simplest way to fix your children away from play, this recipe is filled with loads of flavor and taste.

In ancient days the skin of eggplant was used by women to color hair.
The raw fruit can have a somewhat bitter taste but when cooked, becomes tender and develops a rich, complex flavor. Salting and then rinsing the sliced aubergine will soften and remove much of the bitterness. It is an annual plant grown in Asia, native to Southern India and Sri Lanka.

Ingredients

71/2 tbsp of olive oil, or more if needed
1 1/2 pound (500-650gms) thick ¼ inch slices of eggplant
3/4 teaspoon salt
500gms 1 pound store-bought or homemade pizza dough ( you could use pizza bases too if running out of time)
3 chopped elephant garlic cloves
1/2 teaspoon fresh-ground black pepper
6 ounces mild goat cheese, cut into 1/4-inch slices
1/2 cup (50-75gms) grated Parmesan (A hard, sharp, dry Italian cheese made from skim milk and usually served grated as a garnish.)
1/2 cup (50-75gms) store-bought or homemade pesto

Preparation

1. In a preheated oven (450 degrees F). Heat 2 1/2 tbsp of oil in a medium sized nonstick frying pan.
2. Season the eggplant with salt and fry 1/3 of the eggplant tossing until golden brown, about 10 minutes.
3. Remove repeat this procedure for rest of the batches of the eggplant.
4. Oil the pizza pan or the baking sheet.
5. Press the pizza dough onto the pan in an approximately 14-inch round or 9-by-13-inch rectangle.
6. Arrange the eggplant slices on the pizza crust.
7. Sprinkle the garlic and pepper over the top.
8. Bake for 12 minutes.
9. Put the slices of goat cheese/ blue cheese on the pizza, sprinkle with the Parmesan, and then dot with the pesto (Italian, a delicious sauce used for pastas, grilled meats, and poultry. This is made of fresh basil, garlic, olive oil, and Parmesan cheese. Some versions also add parsley and walnuts or pine nuts. The ingredients are ground into a paste and moistened with the olive oil. Pesto is also used to describe similar sauces that contain other herbs or nuts.)
10. Bake until the cheese begins to turn golden at least for 15 minutes.
Serve pizza topped with eggplant and cheese to your family members, friends and don’t forget your naughty children. They’ll ask you to prepare this pizza again and again. Enjoy it with a soft drink or soup.
