Instructions:

1. Get Set Go:

  • A soup pot is essential for making vegetable stock. Steel pots are kitchen friendly, so you get one.
  • Cut all the vegetables in cubes, rectangles and in oblique shapes so that the vegetables can cook properly.
  • When you cut celery, do not add the leaves on the outside as they are bitter.
  • Once you finish cutting your vegetables, heat your soup pot and pour 1-2 tbs of oil in it.

2. Cooking process:

  • Put all the vegetables in the heated pot and allow them for 5 minutes to sweat and release moisture.
  • Now, you add water and bring to it boil.
  • In a muslin cloth, add all the spices and make a sachet and throw in the soup.
  • Bring the flame to medium for another 15 -20 minutes and then simmer for another 10-20 minutes.

3. Waiting Period:

  • Usually, it takes 30 -45 hours on top of the gas stove for the vegetables to extract maximum flavor.
