Krafts Foods slashed down the maturity period for Parmesan

pamesan cheeseRecently we read about a wine-maker developing a machine that quickly ages wine, and now it is the Kraft Food guys who have rolled out Parmesan cheese only in six months. No doubts about it that it has made a couple of Parmiggiano Reggiano producers go nuts over it as the actual time for curing Parmesan, one year, has been reduced by half as per the new processing standards of Kraft foods. However, the Americans loved the taste of the new product or six-month cured Parmesan. It would have been an issue if Kraft Foods would have sold Parmesan in Italy where it is known as Parmiggiano Reggiano, which has exclusive rights to the name and manufacture.
