A herbal-fruity stuffing for roasted fish

If you are bored with the usual spicy and ginger-garlic flavoured stuffing for your favourite fish, then, for once, be a little more adventurous and try out this dill and orange flavoured stuffing.

It is not only different but also will surprise you with its refreshing taste. So, set aside your reservations and do try out this unique filling.

Serves 4
For the stuffing:

70g breadcrumbs
40g dill fronds, chopped
6 spring onions (white parts only), finely sliced
1 unwaxed orange, zested
4 tbsp extra-virgin olive oil
Sea salt
Freshly ground black pepper
Whole fish , scaled and gutted 1-2 tbsp olive oil

Heat the oven to 200C/400F/Gas Mark 6. Mix all the stuffing ingredients together. Check that the fish has been thoroughly cleaned. Rinse and pat dry with kitchen paper.

Make three deep, diagonal slashes along the top. Push some of the stuffing into the slashes and then stuff the cavity.

Lightly oil a baking sheet or roasting tin, lay the fish on it and roast for 20-25 minutes, depending on size.
