Bean Curd Salad with Mussel Vinaigrette

Beancurd salad is a great way of adding proteins to your salads this winter. The recipe is as follows:

Ingredients

Grated bean curd
Grated Carrots
Steamed Beans
Chopped Parsley
Grated Jalapeno
Black Pepper
Baby Corn
Black Pepper
Mussel vinaigrette
Salt

Method

Toss all the ingredients properly and drizzle some mussel vinaigrette on the top before serving.

Note:- To make mussel vinaigrette, chuck out the mussels after steaming them in water. Then after separating mussels from their shells, whisk in red wine vinegar, mustard, pepper, salt, lettuce and olive oil.
