Bebinca: The yummy Goan sweet treat

Apart from being a tourist hot spot, the next best thing that Goa has to offer is delicious food. Goan cuisine is a mouth-watering feast with some of the most lip-smacking seafood and meat preparations, cocktails and feni and sweet delights. One of the popular Goan desserts is Bebinca.

Bebinca is a layered pudding prepared with a lot of effort and patience. A typical Bebinca consists of 16 layers but people can add more layers to it as per their wish. So here is the recipe for the rich, mouth-watering, traditional Bebinca.

Ingredients:
Plain flour – 250 gms
Coconut milk – 700 ml
Sugar – 2 cups
Egg yolks – 2 dozens
Ghee/clarified butter – 1 1/2 cups
Nutmeg and green cardamom powders – 1 tsp each

Method:
1.) In a mixing bowl, add sugar to the coconut milk and stir until the sugar dissolves.
2.) Separately whisk the egg yolks until a creamy texture is obtained. To these add the sugar-coconut milk mixture and mix thoroughly.
3.) Now add the flour little by little, continuously stirring to make sure no lumps are formed. Add the nutmeg and green cardamom powders and mix well.
4.) Now heat a pan which is deep (preferably 6″ deep) and add about a tablespoon of ghee to it. Put enough batter into this ghee to obtain a 1/4″ thick layer and cook on low flame until the layer is done.
5.) Now spread same amount of ghee over the cooked layer and spread same quantity of batter over it and cook until done. Repeat this step to obtain as many layers as you wish or until you run out of batter.
6.) After the final layer is done, pull off the stove and turn the bebinca upside down. Let it cool.
7.) Cut into pieces and serve.
