Beef and Vegetable Stew

A simple beef, potato and carrot pottage does not require you to over do the flavors. The ingredients are to be cooked just righ to get the natural juices of the steak into the stew.

The recipe is as follows:

Ingredients

1lb Beef shoulder
Cubed Potatoes
Cubed Carrots
Black Pepper
Crushed Oregano
Crushed Basil
Salt
Chopped Shallots
Slitted Green chilies
Tomato Puree
Crushed Garlic
Chicken Stock
Cornstarch
Paprika

Method

1. Sear the beef, potatoes and veggies in herbs and seasonings.
2. In a cooker add the seared veggies and meat and chicken stock.
3. Pressure cook until tender.
4. In some more oil saute shallots followed by slitted green chilies, crushed garlic and tomato puree.
5. Add cornstarch and bit of salt and paprika.
6. Add the stewed vegetables. Simmer for 10 minutes and serve with rice or noodles.
