Carrots and Orange Salad: Vegan Delight

Keep your fingers off the pulses and up the fresh tastes and the vitamins with some seasonal salads. This salad can act as an appetizer, sider and a dressing for many recipes as well. This salad is rich in nutrients and vitamins and can be served on frosty nights along your dishes.

Ingredients

450gms of carrots, peeled and coarsely grated
2 oranges, peeled, white pith removed and cut into small slices, and then into small segments
2 tbsp orange juice
1 tbsp lemon juice
2 tbsp extra virgin olive oil
sea salt and freshly ground black pepper
half tsp ground cumin
half tsp ground cinnamon
1 tsp icing sugar
handful of fresh coriander or mint leaves

Preparation

1. Combine the orange juice, lemon juice, olive oil, sea salt, pepper, cumin, cinnamon and icing sugar in a bowl and whisk.
2. Add the grated carrot, orange segments and coriander or mint and lightly toss to adorn your salad.
3. You can serve the salad along with watercress. In summer you can use strew, some sliced summer radishes over the top for extra crunch.
You can also use vinaigrette for adding a tang to your salad. You could garnish your salad with celery leaves or be a bit creative and use different fruits in addition to oranges and carrots.
