Cauliflower-Chicken Curry

Ingredients

Chicken Thighs
Cauliflower florets
Shelled green Peas
Chopped Tomatoes
Chopped Parsley
Ginger-garlic Paste
Yogurt
Red chili Paste
Cashewnuts Paste
Poppy Seeds Paste
Culantro Paste
Black Pepper
Cumin Powder
Cinnamon Powder
Nutmeg Powder
Cinnamon Powder

Method

1. Marinade chicken and cauliflower together for two hours in yogurt, culantro paste and black pepper.

2. Prepare for the gravy by heating oil in a pan and adding ginger-garlic, poppy seeds, cashewnuts pastes, red chili paste and cumin powder.

3. Fry these pastes for 20 minutes stirring continuously, taking care that the spices do not stick the bottom of the pan.

4. Add marinated chicken and cauliflower. Add green peas, salt, cinnamon powder, nutmeg powder and tomatoes.

5. Slow cook all the ingredients until the moisture evaporates completely.

6. Cover the vegetables and chicken with water.

7. Simmer the gravy for 15 minutes and garnish it with parsley.

8. Serve with rice.
