Resources required:
1. Pork chops
2. Cooking oil
3. Salt for seasoning
4. Rosemary leaves
5. Pepper
6. A heavy pan for cooking
Instructions:
1. Thaw the frozen pork:
- In case the poke is refrigerated and frozen, you need to thaw it. Pork can be very easily thawed in a microwave; however it is better to thaw the pork under cold running water.
- When you use water to thaw the pork, make sure that water is not warm or hot as it can increase bacteria in the uncooked pork.
- You do not need to thaw the pork if it is fresh and not frozen.
2. The cooking pan need to be heated:
- Choose the right pan for pork chops. The pan needs to be heavy either made up of cast iron or anodized aluminum.
- Try not to use the nonstick pans. Nonstick pans will not leave the outer layer of the pork crisp and thin-base pan might burn the pork chops.
- Now before you place the pan on medium high flame to keep it ready for the poke chops, you need to season the chops with salt and pepper.
3. Add oil and the thawed chops:
- Add oil to the heated pan and then add the thawed pork chops to the hot oil very slowly and gently.
- Butter can be used as an alternative for oil; however butter will burn and smoke the chops on a lower temperature compared to oil.
- You also need to make sure that you do not add oil to the cold pan. Wait for the pan to get hot enough and then add the oil.
4. Perfect flipping over of the pork chops:
- After you add the pork chops to the pan, leave them for 3 to 5 minutes, till the chops start coming up the pan slightly.
- Now right before you flip the pork chops, you need to take some rosemary on your palms.
- Place your palm above the pan and rub the spice between your palms and over the pork chops and the oil. This will bruise the spice.
- Now with the help of tongs or a metal spatula, flip the chops. Make sure that you donât flip them before time as the pork will stick to the pan spoiling its crisp layer.
- Cook the other part of the chops the same way and sprinkle some more rosemary over the pork chops. Flip again, and when the pork chops are done, remove them from the flame and place them on a warm plate.
5. Making gravy for pork chops:
- As you are done removing the pork chops from the pan, add a little water or wine or you can also add both to the empty pan and scrape off the red bits from the base of the pan.
- Now quickly add a couple of pats of butter to the gravy and mix it well for the liquids to merge and form thick gravy. Finally, add the cooked poke chops to the juicy gravy by flipping the chops.
