Eggplant with scrambled eggs

eggplantMy favorite food pairing is eggplants with eggs and it is supposd to be a very popular pairing in Eastern India.

Ingredients

Roasted Eggplants
Scrambled eggs
Chopped Onions
Chopped Tomatoes
Turmeric Powder
Whole Cumin
Whole Red Chilies
Cumin Powder
Cinnamon Powder
Salt
Oil

Method

1. Peel the roasted eggplants and mash them.
2. In a wok add oil and add whole cumin, whole red chilies,fry onions until brown, add tomatoes, turmeric powder, cumin powder and cinnamon powder.
3. Add mashed brinjals and fry them for 15 minutes, stirring continuously until they change color.
4. Add scrambled eggs and stir.
5. Garnish it with chopped culantro.

You can have it with boiled rice, chapatis, pulses and mint chutney.
