10. Chef’s Knives

11. Wire Grill Brushes

12. Cutting Board

Instructions:

1. Cut the chicken into pieces according to your requirements. Rinse well under cool water and pat dry using a paper towel. Season the pieces with salt and pepper and place them on a plate. Choose a good barbecue sauce that is neither too sweet nor packed with corn syrup.

2. Start the procedure for preparing the dish at least half an hour before eating. First, get the coal ready using a chimney starter. This allows you to prepare the coal without using any kind of liquid or chemicals. When the coals are ready, spread them inside the grill. Slightly mound on one side and keep the grate in place too.

3. With the help of tongs take the pieces and place them one by one skin down on the grate on the higher part of the mound. When the chicken skin drips into the coal it can cause flare-ups. So be very careful. After the flare-ups move the pieces to the side where there is less coal and wait for the flames to stop. Keep moving the pieces frequently and flip them over to get a nice char on both the sides.

4. When the chicken pieces are cooked properly and brown in color move them to the cool part of the grill. Now cover the grill and leave it for some time. Leave the vents pen for air circulation. The grill meanwhile functions as an oven and roasts the pieces well. The chicken thighs may be moist even if they are left in the grill for a longer time due to their thickness.

5. After 35 minutes, take some barbecue sauce in a bowl and get ready to enjoy your grill chicken. Remove the lid and flip the sides of the pieces. Use a brush or a spoon to coat the grilled chicken pieces evenly with the sauce. Cover the grill again and cook for about 10-15 minutes. After 15 minutes remove the chicken from the grill and serve hot.

A. You can bake the chicken before grilling. But remember to keep the chicken covered with a foil. This prevents excess browning while grilling. Thighs, breasts and bone-in leg quarters are done at 170 degrees Fahrenheit and the thighs, breasts and boneless chicken is cooked at 160 degrees Fahrenheit.

Quick tips:

1. Some people prefer to use skinless chicken. In this case you can use oil or other coat for preventing from drying.

2. When you want to reduce the flare-ups move the pieces to the less used part of the grill while flipping sides.

3. If you are using an iron grate, brush it with vegetable or olive oil before the grilling.

Things to watch out for:

Raw and partially raw chicken is not safe. Bone-in chicken is done well when the juices become clear and the meat thermometer indicates that it has reached the internal temperature of 170 degrees Fahrenheit.
