Khattey Karele aka Sweet ‘n’ Sour Bitter Gourd

khattey kareleI had a wonderful weekend with healthy bitter gourd, which promises to flush out all toxins from your stomach this summer…so gorge on ice-creams, but don’t forget to munch a bit of the following bitter-gourd dish to balance between health and indulgence. Bitter gourd is made in several ways to woo one to eat this vegetable and I am going to make bitter gourd aka Karela in India with tamarind sauce and jaggery.

Ingredients

Bitter Gourd
Tamarind Pulp
Jaggery
Red Chili Powder
Mustard Seeds
Crushed Garlic
Turmeric Powder
Rock Salt

Method

1. Wash, seed and chop bitter-gourds.

2. In a wok heat oil, add mustard seeds and turmeric powder.

3. Add chopped bitter-gourd and fry on a low-fire until tender.

4. Add jaggery and stir the dish until it melts.

5. Add tamarind pulp and salt.

6. Simmer it for 10 minutes.

This dish is best accompanied with boiled rice, lentils and chutneys.
