Lamington Cake, the frosted slim

lamingtonRt. Hon Charles Wallace Alexander Napier Cochrane Baillie, Baron Lamington, GCMG, Governor of Queensland from 9 April 1896 to 19 December 1901, lends his name attached to this dessert. The Lamington dessert is a melting delicacy wrapping up the flavors of ‘flavored gelatin’ desiccated coconut and a spongy butter cake. While you have to get the sponge cake done, for the filling you have to beat cocoa powder, icing sugar, butter and milk. Pour hot water over it and blend it smoothly.

To frost you need to remove the crust from the cake and cut it into even pieces, followed by dipping the pieces in cake. You need to allow the cakes to set in an oven tray in the refrigerator and sprinkle them with desiccated coconut…tempted to have it with some strawberry sauce, or have the jam fit like a second skin.
